Sardine and Beef tomato Salad

Serves 2 people

Ingredients

1-2 sardine fillets per person

1/4 red onion sliced very fine

Hand full micro rocket

Basil oil

1 tbls Balsamic Vinegar

200g skinned, de seeded Beef tomato

Method

1. To skin tomatoes, place in boiling water for 30 seconds then place in bowl of cold water. Peel off skin. You want diced cubes of tomato. So think of this when slicing. Remove the seeds as you go.

2. Marinate your red onions for 10 min in balsamic Vinegar and pinch of salt. Then squeeze out excess vinegar and set onions aside. Try and keep tomatoes and onions cold.

3. Heat grill to high, light oil skin and salt skin of sardines. Place under for 1 to 2 min just till skin starts to colour. They cook very quick.

4. Mix tomatoes, rocket and onions together. Season. Using a ring ( or carefully place on plate) assemble. Press down slightly if using a ring. Drizzle over with Basil oil. Remove ring.

5. Place sardines on top of salad. Super easy 10 min starter
